electric fan

So i got my new rad installed and a new electric fan, it is adjustable , i think the stat is a 195 ; so my question is what should i set the fan to come on at, ? Should i have it come as son as i see water moving? ?

Is it a one-speed or two-speed fan? What engine do you have, and what pressure radiator cap are you using?

On modern engines with 14 - 16 psi caps, many are set to come on low speed at 220 - 225, full speed at 230+. I'd consider those upper limits for an older engine. I'd put the sensor down low on the radiator, so you don't run the fan unless you have to. They draw a LOT of power. See what works to maintain a proper engine temp under all conditions.

Or you can install a toggle switch and turn it on manually when it starts getting hot. Make sure you use a relay big enough to handle it - mine has a 70amp relay.

its a 1 speed fan with a 350 ( i know) but anyway , i was thinking as soon as the stat opened ??

If you are driving down the road at say 45 mph and it's 40 degrees out, there is no need for a fan, but the thermostat is open. I know plenty of people who run the fan anytime the engine is running, it's a waste, and likely to wear out the fan prematurely. They'll never overheat, tho!

Ideally you would run it when water leaving the radiator (back to the engine) exceeds some temperature, indicating there is not enough airflow to cool it without a fan. Then run it til it drops below that by say 10 - 15 degrees, then turn it off. You'd need to know how much deadband your sensor has (difference between On and Off temp's).

I used a spal wiring kit which came with a relay and temperature switch (I had mine mounted to the thermostat cover, see pic). The temp switch was set at 180 degrees (turn on temp, turned off at 165) but 195 degrees is okay too. I also ran an LED to my dash when it kicked on so I knew if everything was working correctly. If not, I also had a bypass switch. It was a good set up and worked great.
