The engine does not need the EGR to idle correctly. In fact that is what a bunch of those hoses and wires where for, to specifically turn the EGR off at idle so it will not mess the idle up and cause it to stall. With the EGR gone, you might get a little engine ping on a hot day, not much else. And that can be tuned out.

Have you adjusted the idle mixture screw on the carb?

If you went thru this post just above you will see my 81 F100 w/.300 has the smog removed as well and idles smoothy.
It will pull from about 1000 RPM in 4th gear or a little higher RPM, (35 MPH) in over drive with out bucking.

I would say you either have a vacuum leak or the EGR port is not plugged causing a vacuum leak.
Did you leave the EGR plate in place with the valve on the end and just remove the vacuum hose or ???
I would start looking for a leak between head & manifolds. You running EFI EXH manifolds or the factory log?
If EFI there is some work needed to get them to seal as the lips the washers hit are at different hights to will not pull tight evenly.

B TW I am running EFI EXH manifolds with the factory intake & carb.
