We have a 2016 F250 with the 6.2 L v 8 engine. We tow an 11,000 LB GVW 5th wheel trailer. We tend to average high 7’s to low 8’s in mpg. We’re looking at downsizing to a bumper pull that has a 6,800 LB gvw and is nearly a foot lower in overall height.
Any thoughts on how much if any improvement I may see in mpg?

With a 5th wheel you punch a hole the the air once but unless you have a cap on the truck box you punch it twice with a TT. There are so many variables with mpg pulling it's really hard to say with the biggest being the way you drive, then speed, design of the front cap to mention a few. When you are talking about a 6.2 rear end gears make a big difference with the 4.30s being the best for pulling and getting the best mileage and I found this from experience over the years of pulling a 16K 5th wheel with mine 6.2 4.30 gears is using top tier fuel. I'm talking as much as one mpg over cheap discount has from grocery stores, Flying J, Loves and places like that.
I've seen similar results to what's been said. Even a relatively small box (camper) hitched to the back really sucks the mpg. I've put 2 ton of compact weight in the bed and couldn't measure a change in mpg but even a small trailer makes a noticeable mpg difference. I'm guessing your empty mpg is around 14? I'll guess the TT you mention will save you around 1mpg.
Speed definitely affects mpg. I know we get close to 1mpg decrease with the fiver comparing 60mph vs 70 mph with our diesel as well as with the gasser we used to use. So I take that and calculate the gallons used vs hours driven. As an example, our trip last summer to Utah was 4000 miles round trip. Keeping it at 70mph cost us 30 more gallons but saved us over 8 hours driving. Our diesel is happy with the cruise set to 70
I went the the other way. 2017 6.2 f250. Pull a 25 foot travel trailer that is #7500 for my nephew (because he has replaced his 68rfe twice) and my 35 foot #11800 5th wheel. The truck gets .4 mpg better overall with his camper vs mine.

Same with our gas. It likes 70 mph in 8th gear. Sure, I could save 1 mpg or so going 60 mph, but 60 seems so slow now days. It sure didn't back in the 80's....
I'd assume you won't see any difference. We average 8-9mpg pulling a 12,000lb 5th wheel with a 2015 6.2 gasser. We also averaged 8-9mpg when pulling a 5,000lb 20ft boat that we recently sold.
When the truck in my signature was stock and I pulled the FW in my signature I averaged 9-9.5 mpg cruising at 62-65mph. I swapped out the ZF5-47 5 speed manual for a ZF6-650 6 speed manual, installed a complete Banks exhaust system including stainless headers and their own "V10 engine calibration" chip and installed 4.30 gears to replace the 3.73's my mileage went up to 10-10.5 mpg cruising at a solid 65mph. Mileage aside, it is a much better performing TV especially running in the mountains. Based on my costs for these mods it should pay for itself by the time I turn 85.
