It seems I am using fluid, but can see no leaks.
I have to top it off a few times a year.
All new brakes, rotors, etc @ 100K
It seems to me it uses more than any truck/car I've ever owned, but too, its the first 3/4 ton I've ever owned.
Not sure, but I don't recall it uses fluid like this when I first bought it.
Any ideas?

Brake system is a sealed system and should not need topping off. You have a leak somewhere.
If you dont see any fluid seeping from the lines, fittings, bleeders, then id suspect a caliper piston seal is weeping.
Yeah, I thought perhaps the brakes on a 250 are heavier, and wear more, requiring more fluid to travel, maybe. I don't find comfort in such reasoning.
Also, I believe my brake pedal is not as stout, a little spongy perhaps, that I think will actually keep depressing a little if I stand on it hard, not that I slammed my brakes.
As your pads wear down more fluid will fill the gap in the caliper piston but it should never be to the point where you have to actually add fluid. New pads should return your fluid level back to the full mark on the reservoir.
Check around, you'll eventually find a leak based off of what you described is going on.
If you can't find the leak, you may want to remove the master cylinder the seal on the rod may be leaking, especially since you said the pedal is spongy.
Usually, if the Master Cylinder is leaking you'll find dripping on the frame rail below it. My 2002 MC located on the drivers side has a slow leak and I have the parts to replace it. It doesn't leak a lot of fluid but enough to make the metal wet-ish below it. Anyway, on my 2002 it is the ORIGINAL MC so it's time to change it out.
