I have what is probably borderline paranoia about my coolant temp gauge failing, so I'd like to add a second one that will read actual temp and display on a gauge mounted in the cab. Has anyone done this? If so, how did you add the port for the additional gauge?
I ran the sender off my coolant filter head from Diesel Site. There is a 1/8" NPT fitting there. It is up under the ashtray area with a few other vitals.
All electrical gauges, mechanical are more of a nuisance to install. I THINK the stock water pump also has a good size bung you can remove if you wanted it there.
Do you have an EGT gauge? If not, get one of those first. The cooling systems on these trucks are very robust and are rarely an issue. EGTs are a much higher concern. If you already have an EGT gauge and just want a coolant gauge just for the fun of it, that is fine.

I'm planning to do both, but I'm replacing my fan clutch, water pump, and pretty much the rest of the cooling system except the radiator this weekend, so wanted to go ahead and take care of this one with that work.

just ordered a coolant filter from there. What gauge and sender did you use?
Before you get started, you may want to consider a coolant filter like Eric has. You can either do a stand alone or get an international water pump with an integrated filter
I wish I had seen the water pumps with integrated filter before I ordered everything from rockauto! Especially since that comes with a whole kit, including new bolts. Would've saved me a lot of time and probably some money too.
I like the pump and filter setup from international and considered it last year when I had a leaky pump. Reason for not going that route is if I needed to I could just get a replacement local and the bypass system was still there. I did get the sinister pump new manufacture lifetime warranty. Only the third pump on the truck so far. After the new pump sealed up the weak spot found that I needed a new radiator and put a stock Motorcraft in. Still had the distilled water from the flush in so no coolant loss. The bypass filter has been changed three times and about to do it again. Each time cut it open with a filter cutter and it did have junk in it. Each time less..

my choice for gauges is isspro, all of the semi's I work on have them.
I did a 3 gauge pillar mount with boost exhaust temp and temp, the temp gauge is on a 6 position rotary switch with a probe for coolant, engine oil temp. Transmission temp and rear axle temp.
for the coolant temp I removed the plug under the thermostat facing the driver side fender and put a T in it with the temp probe pointing up. Then a nipple on the end for the hose to the filter. Then another T in the return heater hose for filter return.
