With my endless leaking Ford degas tanks and now large leak I’ve been going through a lot of coolant. The shell elc is now hard to find where I am now. What are you guys using?

TSC (Tractor Supply Company) stocks Rotella ELC concentrate on their shelves if you have one of those near you. You can mail order it as well and keep a stock at your residence.
Other than that, anything rated to meet CAT EC-1 should suffice.
I offer a word of caution about going directly to Caterpillar though. The location in Greenville SC was very "unhelpful". They insisted I didn't require 4 gallons of concentrate and I had to argue with them about the EC-1 coolant I wanted to purchase. They repeatedly said they "don't have that part number" even though I was using the Caterpillar website to look up the number and show them right there in person at the parts desk. I was a big fiasco and I ended up talking to the manager of the after he walked by and saw the trouble that I was having.
Very polite and very helpful, but I left empty handed because I still could not get the product I needed sorted out.
I promptly researched another ELC product in the parking lot of Caterpillar and went directly to TSC in order to purchase Rotella ELC.
Perhaps check locally with some of the parts stores to see if they have it in stock or you can order it in a few gallons at a time and pick it up. If you like the product and will continue to use it, seek out a source in order to acquire it.
Another question I have is the current shell is the nitrate free elc. I believe it’s ok however not 100percent sure. Do you know if it matters for this application? The link above says it can be picked up local today. When checking with the local parts stores I was told why is he being so specific tell the guy he can just get “any coolant” off the shelf. The guy was pretty know it and rude I gave him a couple examples on what he “knew” which didn’t take much haha although I wish I knew more myself. Naturally West Marine has me covered for top dollar this go around. No TSC in the area here but their price looks good. I can probably get the cat coolant from a local marine supply distributor. Yeah some of those desk jockey’s can be pretty tough I once went to an international dealership they were upset it was for the 7.3 power stroke…. Told him what are you talking about this high-pressure oil repair kit is for a DT466 men are waiting to keep working get my part ready now lol

When I was looking around for Rotella ELC on the interwebs for you to have a source of purchase, I saw the nitrite free (NF) version. I did not link that one though as one of the comments said that the bottle did NOT list CAT EC-1 on the bottle. This seems to be true based on the literature that Shell has produced and I have linked below.
This is not to say that the NF ELC would not be just fine, I just don't know that to be true.

Well... You have to consider the source of misinformation and rudeness, and I believe you are doing that already.
A lot of times you can pick up Rotella ELC at truck stops like Love's, Pilot or Flying J as well. Might want to try those out for possible sources. If you go TSC and have it delivered, you can get free delivery after $50 or so I think. We purchase our dog food from them and even though we have one in town they will bring it to our door for no charge.

CAT ELC is easy to get and affordable. I paid $52 for a 5 gallon bucket last year....though I am sure Biden's inflation has changed that price LOL Hope this helps.
I know the supply chain is very choppy but I have seen Peak Final Charge at Wal Mart by me. It is EC-1 compliant. The Irish auto parts store carries it too.
OAT coolants are fairly tolerant of other coolants so if you are in a pinch I would not sweat about it.
