Have you checked your engine harness to make sure the grounds are secure and the harness itself isn't rubbed through in areas it is rubbing?
How about your main grounds to the frame and block etc?
You have alot of stuff going on all at once.
im completely new to everything about 6.0l so i got no idea honestly. where the grounds are for stuff. im sorry im not usually. but tell me i can figure it out
I don't remember exactly where they are but follow your entire harness form firewall to engine and you'll see small gauge wiring (single sire). I recall they're on the intake studs and the firewall/fenders. The main grounds as well, follow those and they are on the block and the frame...obviously originating from the battery.
Same note, trace the harness on the engine where it routes through bracketry and engine parts and physically move it to check for chafing.

i will say underneath my coolant deegas bottle there does seem to be what looks like "wetness" that is on some of the wires. like they have been. also three wires by the same are are just randomly cut. two of them go up to the light on the inside hood. but that light doesnt work
The accelerator likely is not the issue. Check the Vref voltage and it should be at or very near 5.0VDC
A short in the EBP plug can cause this very issue. We had a guy that must of thrown $2000 at this very
issue and never fixed it until he checked what we had been telling him to check all along.
So check the Vref voltage and watch it and wiggle wires. If you see it change while wiggling you have
a place to start looking.

any idea where the ebp plug is?
and did u use a volt meter to read it? any idea of a decent meter to read? i dont have one
Sean made a good point; check what the Vref is. With everything you have going on there, the common Vref to everything may be affecting all of that. Mark/Bismic should be jumping in with this; he is good going through all of this with the uninitiated.
