After looking at the table of page 43, it is between X80001 and Z25000, therefore the truck was cataloged as 1977 (Y is between X and Z).
Having this information, I now know the engine is a Cummins D.S.O. My goal was to get the engine type so I can order the right manifold so I still have some research to do. This document may give me the info if I manage to get the D.S.O. ID. However, to do that I need to find the warranty plate. The document says that typical trucks will have the plate on the "Latch face of left front door" and the "safety standards certification label" (which could give me some useful info for my quest) could be either on the "Quarter pillar opposite the latch face of the left front door" or "outboard side of the instrument cluster". English is not my first language so I'll make sure I understand what these locations mean and I'll post here what I discover (the truck is at my cabin so I'll post again in a week).

I'm looking at the same thing you are.
Once you are looking at the truck, that tag will be pretty clear when you open the driver's door.
The tag will probably not give you specific engine information, as the 4th digit of the VIN, S as you noted above, is the same on that tag.
The tag will have color, interior, cab type, transmission, model number, axle, GVWR, sales district and the special order number.
Usually in these cases, an inspection of the engine will lead you to the specific type. If not, you can post pictures here and others will try to identify it.
Knowing it's a Cummins and the year of manufacture, you can go through the list of Cummins engines for that year also.
Post a picture of both sides of the engine. Also, there should be a data plate riveted to the accessory drive housing on the drivers side front of the engine. That will tell you exactly what engine you have. The housing is what the fuel pump is mounted to.
