On my ‘67 flairside. Where the step attaches to the fender, both these parts where they mate together are bad for rusting. Is there/should there be a gasket of sorts between these parts to prevent the metal to metal contact? I know where the door handle mates to the cab and where the west coast jrs mount to the cab there is a pad between each mating surface. If so, what would you use?

In the old days they used what they called fender welting. But it would hold moisture more than just bare metal. That is why there is none between your fender and bedside. I would not use anything, just make sure it is painted good.
Did you put anything between your fenders and bedside? Same scenario. I love the color.

No, nothing between the fender and bedside. For sure, this truck will not be seeing the mud/snow/salt nor sitting out in the rain/weather so that in itself is a rust preventative measure that can be effective.
If you want something just to prevent rubbing, cut a piece of bicycle inner tube. It's thin, easily cut, and new ones are cheap if you don't have an old bike around.
