This may have already been discussed, but search led me to towing trailers?
any WHO at night i use the app to lock the doors and make sure i didnt forget. it then tells me the doors are locked and air pressure, dte and current miles on odo
if i lock or unlock with fob it does not update the info on the app.
yesterday i left my key in the house and unlocked using the door buttons, and thought let me see if it will turn on, not start but turn on. it did not ad gave me a message about no key detected.
so i locked the door and off i went
then a few hours later i checked my pass ap on the phone and it had updated the time when i pressed the key on event.
had no idea it would do that. not sure if its important, but interesting
i also use the app as a lo jack so i know when my wife is near home if she drives it

It's only important if you care about your personal data security. FordPass updating your vehicle information has nothing to do with it being on an Android phone, and has to do with the permission you've given Ford to record everything your vehicle does.

If your vehicle has connectivity technology (e.g. FordPass Connect or Lincoln Way modem or a Connectivity Device) and you connect your vehicle to your FordPass account, your vehicle will share Connected Vehicle Information (e.g. Vehicle Location and Driving Data) with Ford. Deleting or uninstalling FordPass from your device will not disable data sharing. Depending on how the vehicle is equipped, different in-vehicle controls may be available to you. Learn more about modems, other connectivity technology, in-vehicle controls, and in-App controls in the Owner’s Manual or call the Ford Customer Relationship Center. To stop FordPass-related vehicle data transmission and access enabled by connecting your vehicle to FordPass, contact the customer relationship center; and consult your vehicle's Owner’s Manual (and follow the procedure to disable your connectivity device which may require performing a Master Reset to stop data transmission.

i am a sailor so there are no words i dont use in my expression of OTR trucks blocking the fast lane trying to pass a 65 mpg big rig while the passing truck is doing 66
They're not recording "audio" Robert, just computer signals from different modules in the truck... lol! Nothing to worry about... I've been using FordPass since I got my 2019 F-450 in August of '19... mostly for remote start, sometimes to check oil status, etc. - rarely loc/unlock 'cuz key fob is usually as close as phone!! No problems in the last 10 months or so, since the got rid of the bugs in the App!

Contrary to your reading of the Privacy Policy, your vehicle records audio and reports it to Ford. They admit they do it.
Furthermore, your position that you haven't had problems with the app for nearly two years doesn't have anything to do with OP's concern of data transfer he wasn't aware of. It's as if you stopped reading at the subject line of this thread, then decided to contradict Ford and ignore the topic. Weird.
