I would stay electric, so long as the charging system and wallet is up to it. You really only need the fan at idle and low speed. Any other time, a mechanical fan is robbing power and economy. A fan clutch for the mechanical fan would allow the mechanical fan to be "on" only when needed but it does require extra room to fit the fan and clutch.
I would also go with two electric fans for a couple reasons. One is, particularly if you don't use a shroud, that you can get airflow across the entire width of the core. A single large fan will leave a couple inches of the core to the left and right without airflow, which may not matter but is something to consider. Another is the redundancy. That's not to say necessarily that only one of the two fans can keep the engine adequately cool but at the very least, it should buy a little more time to get to a more convenient location to park, rather than having to deal with an overheated engine on the side of a busy road.

Thanks! Everything you said was my thought process entirely.. I can't speak intelligently about horsepower robbing or mileage, but that's exactly what I was thinking as far as redundancy and cooling efficiency.

I hope for the price they charged you, did the radiator get re cored?(probably not) or was that their labor charge? Now days it is cheaper to buy another radiator than get yours repaired and/ or re cored. The most important thing you can do is put a shroud that will seal nicely to the radiator. The radiator needs to have the area for the air to collect and help cool the cores down. I had a 64 box Nova with a hot 350. It would heat up anytime I would have to idle any length of time. Got one out of a junkyard fabbed up some brackets that fit the frame of the radiator, and it never heated up again. I see guys that put the plastic ties to hold the fan on. that chafes the cores and eventually winds up with a leak. I see that yours is connected to the frame of the rad.

Well, I finally got around to installing the Derale dual fan system with shroud. It should push 3750CFM. Went for a quick errand running trip today, and with temps being about 95F outside, and the AC cranked up, water temp got to 210F at the most, but spent the majority of it's time around 200-205F. So I'm ok with that..

Next test run will have to involve some freeway driving and putting it under heavy load, this was streets with some minor traffic and a top speed of maybe 45mph..
