I have a 51 F1. Most of the interiors in those years were a cardboard type material. It generally was grey or light brown. You can order them from the antique Ford places.
My truck is hot rodded, so I did my interior grey with grey bucket seats etc. I made my own headliner. See my pics, there is one of the interior.
As for the paint, maybe these links might help...
48-52 F-series were the same color as the exterior. 51-52 had a fancier version called the 5 Star extra. It had 2 tone paint on the dash and doors. It also had some interior door panels also. The was a set of these on Ebay recently.
