Looks like it is running an aftermarket hpop (adrenaline from diesel site). The oil crossover has been removed though. Any thoughts on why that is?

The oil crossover is a non-essential piece that causes additional leak points for the oil system. Your Adrenaline HPOP probably has the check valves removed from the fittings which does exactly the same thing as the HPx (oil crossover) is said to do, but without the additional possible leak points.
You got a smoking deal sir! You could sell that truck today for well over what you paid for it. I thought I got a good deal 7 years ago when I paid $9200 for my truck, nothing compared to you though. You just about won the lottery with this thing and the aftermarket parts that are on/in it. If I had been in your position, I would have bought that thing right then and there too.
Not listed in your build list but you've got a nice fuel bowl delete and regulated return setup there too. Do you have a fuel filter on the frame rail down by the pump?
Do you know if the H2E is a VGT version?
I wonder if what looks like a deleted HPX are actually valves to bleed the oil galleries. There's a similar looking valve on the FPR.
And yes it's got the fuel filters on the frame, you're probably right about the fittings on the head and regulator. That's a pretty cool feature if that's the case.

its probably rust free also given your location. Those trucks are selling for 20,000 in Florida simply cause they are usually rust free. Crazy money 💰 . Congrats on a great deal!! Looks like PO installed a lot of sophisticated custom stuff there. Divorced intake instead of spider, quick disconnects at oil rails, etc. Don't change anything until the situation is fully understood.
