so if they say that the drag coefficient of the aerostar is great and if it had a diesel it would have gotten 40 mpegs, has anyone heard of some one doing an eco boost motor swap in an aerostar

All ECOBOOST engines are dual overhead cammed, so their top ends would be too wide to fit into the engine compartment.

I've heard of a 4BT diesel swap in am Aero, but it made the already slow van a snail!

An EB swap using the 2.3L 4cyl would be something worth considering, at least to me. That engine makes great power through a wide rpm range, but especially at lower rpm. It would need to be mated to the right trans to make the swap a mileage champ. There are several new ones that might work.
Ford also used to sell the Ranger with a 3.0L 4cyl turbo diesel in South America. I think that would be your best bet if you could find the right pump and ECU/tuner for it. Keep us posted if you start this project.
