I don't have specifics but 17-18" wheels are where you will find the widest selection of tires because they are what a lot of modern vehicles use. Summit racing is a great site to use to see what tires sizes are most available. Pick a size with a lot of options and then pick a wheel. Probably the last thing you want to do is pick a wheel you like, only to find that the tires that provide the look you want and fit are $200 each or more.
Re brakes, typical disc conversions fit many 15" wheels so no issues there, if that is what you are using. However, higher end conversions tend to require 18" or larger wheels for clearance.
Avoid going by backspace alone to choose a wheel. The backspace required will change depending on the rim width. You need to know the offset as the offset required does not change and you can then decide if a slightly different offset will work. This becomes most critical when you try to fit the widest wheel and tire combo possible. You have more wiggle room with narrower packages.
