I have a 2017 F-250 that has an aftermarket backup camera installed in it. The view is in the rear view mirror, and the camera is mounted in the tailgate latch...
I am unable to see the hitch through the camera, and am told that there is not any adjustment to the camera, am also told that only a factory installed camera will give me the view of the trailer hitch for backing... does anyone know this to be correct?
I don't know. I had an aftermarket one on my Ram that went into the aftermarket headunit. I could see my hitch ball with it normally, but it was right on the edge of the screen. There was a way to hook the tailgate's support cable over the post for the latch which supports holding the tailgate open around a 45 degree angle, which gave a better view. I found this randomly plundered image from Google that kind of shows the same concept, if you look at the driver's side of the tailgate:
I haven't tried it with the F250 though, because A) I've got the 360 camera system, and B) I now tow a fifth wheel so I use the bed camera for hitching.
Yes, the factory one is amazing for hooking up a trailer. You can see the hitch regularly, and you can also hit a "+" button and it zooms into just your ball and hitch. Makes it amazingly easy to hook up without any help.

Thanks in advance.

Factory-installed tailgate camera plus 8” Sync 3 display provides great views of the drawbar and ball:
