Is there anything that I can check before taking it to the dealer AGAIN, last time they cleared codes and said to come back if this issue returns, few weeks ago... I know it's a sensor issue, maybe I can clean it and put some dielectric grease in there. Where do I check for it in the engine bay? Any good reference?

Engine coolant temp not oil temperature. And the code 2560 is engine coolant low. If this is a diesel, check both reservoirs. Good luck finding where coolant temperature sensors are, its pretty tight on top of the engine. I would take it into the dealer and show them the video, pretty concrete problem with a sensor. Had the truck been running or just started when first fired up so it would actually be cold, seems an open or corrupt curcuit.

It was cold start, coolant level is fine, no visual problems in engine bay.. it's sensor issue for sure, I just wanted to try some troubleshooting prior to taking it in. Last time dealer said that oil temperature was causing check engine light, so they reset it and I was told to come back to swap the sensor if issue comes back, should be under warranty still. I guess going to the dealer on Monday.
Once truck warmed up a bit, I shut it down and started it back up, check engine light went out and temperature went back to normal range.
Check some sensors for a bad pigtail with corrosion in it. There are two wire sensors, and there are three wire. Three wire use a reference voltage. Check sensors for wiring issues leading up to the sensors, fraying, mouse bites, chewing can cause your issues.

Ok. I know some people have seen a DTC pop up on oil or coolant temp in cold weather when using the block heater.
It might be weather related or just bad connection, that's why I wanted to find this sensor and check it but I guess dealer can replace it for now, we'll see how it'll go. + it does have the block heater recall for wiring check, not sure if that's related to sensor malfunction or not.
block heater recall affect your truck? Just be sure not to use until the recall is done. All they do is check for corrosion, but if there is some the wiring to the block heater to the plug all must be changed. This is a big fire hazard, so best to not use it until recalled. I know you say have never used it but saying to be sure. I think with your experience previously with oil temp sensor and now the coolant temp code, that it’s the sensor reference circuit. You really want to make them responsibel for this type of thing.
