I think you'd have better response if you posted this question in the 6.0 forum. I blocked out my 6.0 experience (14 years owning one) to save my sanity, but I used to watch (in priority order, depending on how many you can simultaneously monitor):
EOT
ECT (and compare the difference. Spec is 10, my normal was within about 20 degrees)
EGT (only if tuned. If not tuned, it never really climbed high enough. If you're running a tuner over about 30 HP, you'll want to eyeball it on long climbs)
Batt volts
FICM voltage
Boost (indication of load on the motor)
Tranny temp

^^^ This. I loved my 6.0 it was a great truck but you had to stay ahead of it. EOT is critical. I used the Torque app for monitoring mine.
As noted, check with the 6.0 forum. A wealth of info there.
I'd also suggest monitoring fuel pressure - just to keep your injectors happy
I use TorquePro to watch ECT, EOT, added the Delta Config jut to make it easy, FICM voltage and Transmission temps. Along with the fuel pressure gauge I also have an EGT gauge, but it's never approached critical temps while towing with my truck.
Are you talking about setting alarms for variations?
No - awhile back someone posted an formula on here you could key into Torque Pro that would display the Delta between EOT/ECT. I still have those displays on my monitor, but right next to it is the Delta numbers, saves a lazy old fart like me the time and trouble of subtracting numbers while going down the road.
I believe that formula is posted in the Tech Folders, takes just a few minutes to key into Torque Pro.
