Anything is possible, with the right tools and money. If its anything like the car scene, itll be pretty easy. Youre going to need all the manual parts (obviously) including pedal assembly, clutch, hydraulics (or cable, whichever it is), trans, shifter, maybe driveshaft. The hardest part will be getting the truck tuned. You computer will still look for the automatic transmission signals so that part needs to be taken out in the computer program. So as long as you have someone who can tune it, then youll be alright.
I converted mine from an auto to a manual, it isn't that bad of a job buying a donor truck isn't a bad idea but you can just pull the parts you need out of a junkyard if you know what you need. I would be happy to answer any questions you have.

Look into the drain tube mod. this keeps and drippings from the valley from contaminating your clutch.
Dowel pins on the engine that go into the trans are longer for the automatic. I cut them down when I put the engine from my auto 250 in to my manual 450
