Correct 390 Temp?

What is the correct operating temperature for '74 390? I had a 190 thermostat and the engine ran at 200-220 degrees normally and as high as 245 degrees with a load (camper and bike trailer) uphill. I thought this was too high so I switched to a 160 thermostat and now it runs between 160-180 normally. Havn"t pulled the trailer uphill with new thermostat yet, but camper is on truck always. Truck is '74 F250 .060" over with Holley 650 4bbl, Melling RV cam, Edelbrock intake, Electronic ignition, dual exhaust. Thanks for any help...

Correct 390 Temp?

That does sound high, my 88 Bronco sits around 200* and no more than 220* idleing on an 90+* day with the Ac running. I have towed 3 tons and my temp never went above 210*.
