Low heat, longer cook time, indirect heat, cover with foil to trap moisture........ they say that about almost everything.

Hi Onug, It was kind of on the Fatty side. It was good but one of the most fatty Briskets I have had.

I find I have to trim a lot of fat off them, especially between the flat and the point.

Sounds like a good idea, I don't have enough good wood for something like that. And around here it's to cold in the winter to have just a small fire for smoking meat.

Just dropped a brisket in the smoker for an all-night cook. Sixteen pounds of awesome getting happy.
Have blue lights in the driveway right now so my snowflake neighbors get uncomfortable because I watch the Seahawks....

Blue lights in my driveway are from the roof of the police cars. My neighbors are used to cops coming to my house.
