In the first post you state you see 10* delta. The first thing to do is get those two temps to read the same.
Mark had some info but it does not appear there anymore. You likely have a bad sensor on one or the other.

Let is sit for 24 hours, then see what the readings are, then compare them to ambient temp. The two sensors are the same thing.

If you had temps that were within a few degrees of each other after a cold soak and you had that large a spread at cruising speed then you are in dire need of a new oil cooler.
The max you want to see is 15*.

Well, I believe that's what I did. When I started it up, they were damned near even. Going out on the road, they were about 15d. But when I went up the steep grade, that last screenshot shows the difference.

Crappola.

EDIT:

Wait.. I think you are saying to see what the temperatures read after cold soaking without starting it up. They should be about the same being they should be near ambient temp in my garage right?

This could be a calibration issue?

I could really use a printout of the correct PID settings.

EDIT TWO:

Hang on folks. Are we talking within 15 degrees farenheit, or centigrade?

Google 6.0 powerstroke PIDS for whatever you are using

Fahrenheit is the standard. If they were about even before you started it up then you likely have an oil cooler issue with that large a delta.
Correct, ambient is the outside air temp or temp where it's parked. That is why it needs to sit long enough, these engines hold heat a long time

I think I have the right PIDS now.

Before I go nuts on the oil cooler, I'd like to get the right oil, filter, and cap on it. Since the caps all say NAPA I am thinking I should do a full oil change.

Good idea, get that NAPA outta there

Oil cooler, if you need one, is not the end of the world, and also the perfect time to do the coolant flush to get any crud that might be floating around outta there.
