In doing some further research here, it seems the answer to my question is to go with stock Excursion shocks in the rear and F250 shocks on the front, which will be running slightly compressed with my existing shocks but then be exactly where I want them when I swap to V codes.

Is this the way to go?

Length wise that might fit but that is unknown to me.

However if your goal is improved handeling that is a poor choice of shocks.
Most shocks nodays are valved specific to the application and a pickup truck is going to have lighter valving then a Excursion.

If you click on the part number it has the compressed and extended shock length.

No worries, just wanted to make sure the op knew I was answering his question. I didn't reply to you simply because you had clearly stated you were trying to increase the spring rate which is what add a leafs do.

I’ve got the KYB Monomax (at Pirate’s suggestion) with my ATS V’s and C’s. Those springs give me a 1.5-2” lift over stock height and the shocks work fine.

Thanks, that's exactly what I was looking for. Just bought the Dorman bumpers, will get some Monomaxes this week and keep an eye out for some springs at a later date. Will probably add a leaf to the rear to compensate when towing heavy later this year.
