An F350 is basically the same price. Why handicap yourself for the future?
At the point I ordered mine I didn't see thet the 350 was only 1500 more or I would have. but I dont plan on going anything bigger. Been there done that, not for me. Went tent, tent tt, tt, 40 ft 5er, 32ft Class A now back to a 27' tt. plan on staying here. Went form an f150 to the 250 basically due to DW's moblilty scooter and lift equipment, when the tt was hooked up and everything loaded it put me 1K over weight. 600 was just the scooter and lift.
It does work. For example, my GVWR is 14,000, payload is 4753 (per stickers), so my weight should be 14,000 - 4753 = 9247# with a full tank and no driver / passengers. I've weighed my truck and, as required by law, it is correct.
The payload sticker is specific for each configuration. For example, two identical trucks, except for one being ordered with the Reese fifth wheel hitch, will show a 150# lower payload for the one ordered with the hitch.

I have the copy of the Certificate of orgin for a vehicle as we purchased out of state. It has the shipping weight listed. As I have some time on my hands thought I'd check the earlier posts against the cert and the B pillar stickers. Gross vehicle weight 14,000 -5603 carry capacity =8397- shipping Weight 7756= 843- 48 gallons diesel rounded to 336 =507 - 7.5 gals of DEF 67.5 =439.5- 1gal windshield washer =431.5. I was generous with rounding up the diesel, I wonder where the 431 difference comes from not that it bothers me as 5,603 is plenty cc. for my 5er though that would cover the weight of the B&W and the 90 pound dog in the back seat.
If you take your trucks GCWR and subtract the estimated payload, then you get an ESTIMATE of your what your truck can weigh loaded with equipment and persons.
The way to know ACTUAL is to go over the scale with your truck loaded including persons and mods and your loose equipment you are taking with you. Don't forget to fill your gas tank. Then take the GCWR for your truck and subtract the actual weight of your truck loaded as you went over the scale. The number you get will be the actual amount of payload capacity left to drop your 5th wheel onto the bed (the pin weight). Every truck will be different as the number of passengers, mods, and equipment an owner will put in.

7568 lbs scale weight (1 person, full gas)
11932 lb available to tow on bumper (manual says 12000lbs)
Payload
11500 lbs (ordered the 11500 option not the 10000 downgrade)
7568 lbs (actual scale weight loaded as I am driving it)
3932 lb actual payload capacity available
I thought the numbers would work better for you rather than my bad explanation.
I will say this, if you take the 10000lb downgrade it reduces your legal payload capacity by about 1500 or an estimate would allow you to have a payload of 4000 less 1500 or 2500lbs. Can you drop a pin weight of your 5th wheel and add more passengers than I am taking (1 person)? That is your decision and calculation. I personally bought the 350 so I could do it legally.
