I have a problem every time I start my powerstroke after she’s been sittin for over a day. If I go to start her up she will turn over for about 15 seconds before she actually fires up. About midway through the cranking the oil gauge will jump from zero to half. She sits in a garage kept at about 40 degrees with no engine block heater. Is it just too cold for her to start right up? Asking because my cummins will start right up after a month of not been started.

Try parking the truck nose down (put a couple blocks under the rear) and see what happens.
Plugging in will help for sure.
Have any gauges to read live data to see what's taking so long?
And make sure the oil cap and filter are OEM. If they are not, it could allow the drain back valve to not be held down and the oil to drain back to the pan.
