I changed the passenger side plugs tonight and ran out of time. One of the plugs was an Autolite Platinum and the other three were AC Delco. So obviously these weren't original. All plugs were clean with light tan deposits. Gap varied between plugs but none were wildly out of spec. You could see electrode wear, however. Will do the drivers side tomorrow. I did buy a thermostat and will install that tomorrow.

Everyone says thermostat, and that is a possibility...but I've also read online info cautioning against jumping to conclusions and just replacing the thermostat. Like I said...the top radiator hose was *hot* and the bottom not. So clearly the t-stat is opening at least a significant amount.
Go back and READ what I said. It's a matter of the engine not coming up to the correct operating temp WITHIN THE ALLOTTED TIMING WINDOW.

Now, do you understand what the code means?

Realistically, unless you're subject to mandatory emissions testing for the purpose of license renewal, it's up to you whether to fix it or not.

No need to use bold, I understand exactly what the code means. In no case, however, is a thermostat failure the only possible cause of the code.

And you're correct, above 8500 GVWR in my state and no emissions testing is required. But I hate seeing a check engine light, so I will fix it.

Like I said, I picked up a thermostat earlier and will change it tomorrow. That would be great if that's all it is.

So I was able to get the drivers side plugs changed. The third one back under the fuel pressure regulator is a bit difficult.

Also changed the thermostat. Took a test drive with the scan tool showing live data again...this time temps reached 190-200F so I think this will prevent code P0125 from returning. The engine is running smooth as silk; you would never believe this thing has 155k miles on it.

Hopefully everything is taken care of with your work...crazy the difference that new plugs will make even if they look fine.
