Recently I was gunning my 56 f100 and it was pulling well upto 130mph where it seemed to stop pulling, the wind noise was very loud - I suddenly became very conscious of the fact these trucks weren't designed for that sort of speed and had thoughts of the windscreen coming inward so backed off the power
was I needlessly worrying? are there any examples of these trucks doing these speeds safely?

Where are you from? Sounds like you are from Australia calling it a windscreen and talking about waving your *****!
These trucks are not aerodynamic, are they? My truck can go 65-70mph tops! but not for an extended time.

We've got a 1950 F1 with 400hp - unfortunately I know where every screw & bolt
is on this truck. I start thinking about issues when I top 80 mph. It's a 60 year old
truck with a flat profile... It probably can but I wouldn't do 130 mph in these trucks.
Last time I was in Southern England there were so many folks on the road
we could barely do 40 mph. You must live somewhere off the main roads.

you are driving.
My main concern would be what's under the truck and not what's in front. Stability of the suspension is critical at high speed, one false move or bit of wobble and it's lights out. The windshield would not be high on my list of concerns.
Top speed? Dont know and dont want to. I have had my 51 up to 100 with plenty of engine and gear to spare, and it was enough of a white knuckle ride when the corners came up to seriously consider pulling the engine for something more tame. Not quite like a newer car cruising at 90 while sipping a drink.
After finishing this truck with a simple 400+HP 383 and a 6 speed I now know that anything over 150HP is probably a total waste in these things. Any heavy throttle on takeoff just makes the back of the truck hop up and down, traction is non existent.
Originally I was going to put in a 600HP supercharged engine, what a joke that would of been!
From now on my trucks will all get simple 300HP engines, in one of these things I could smoke the tires with a 150HP 305, there is so little to them it is almost comparable to a T bucket.
Almost anything can be made to handle at speed but you will hit an aerodynamic wall that requires huge amounts of HP to overcome . Most 80HP snowmobiles will go 80-90 mph but to go 110 you need double the HP .
