What is the EFI doing that you don't like?
The wires going to your starter can stay, the ones going to the alternator can also and if you can find a wire that is hot in run AND start positions, then keep that one too and use it for your Distributor otherwise just run new wires.. Get an HEI distributor to make it simple

The constant wires busting and everything else relays and fuses. I'm saving some wires off my wiring harness to the coil and the headlights and stuff like that off the speed density harness

That question gets asked just as often as the one about ditching the EFI for a carb. Answer is always the same. It is their truck and they can do as they wish.
I agree, going carb is a downgrade, but there must be hundreds of threads on this forum asking the same question. Please use the search and you will find endless detail on this and the problems are not limited to wires.

Only remove the wiring that goes to anything FI related on the motor. Everything else on the fender needs to remain.
I did this on my previous '89 F150. Was not a big deal and had it running in a days time.
What transmission? Stick? That is simple. AODE? You need to watch for OD control. Not sure what is entailed with that?

I don't think these trucks came with the aode, just cars.
Your biggest hurdle if you have an e4od is controlling it. Probably wouldn't even be worth the carb swap.
If you have manual or aod, you just need to iron out a few things such as tachometer signals and the like
I can understand going to carb if rodents ate the harness, but I'd seriously consider sourcing a jy harness and swapping it...it'd be less work and money ultimately and you'd still retain the benefits of efi.
