About 60+% of the miles on the truck are towing my 5th wheel. I generally drive about 65 on open Interstate, but drive with traffic (70-75) if I am slowing down the traffic.

I don't tow in the winter other than the occasional snowmobile trip. Used 5.5 gallons in 5,000 miles. I'd say you're very much in the normal range. I will say I believe these trucks use a bit more than the previous generation. My 2016 would go 5,000 miles on its 5-gallon tank, including summer towing.
He didn't necessarily add all 7.5 gallons at one time...

Thanks and yes I think you are correct on previous generation going a bit further, my '15 would need an add right at oil change time and I was hauling heavy in that rig, while now I tow.
I have a little less than 1/4 tank of DEF left, and I am closing in on 7300 miles on my truck.
I need to find some cheaper DEF out there. I just paid $9.99 for 2.5 gallons from Napa here in Spokane.
In my past trucks DEF buying experience; $9.99 /2.5gal jug is quite reasonable, I've seen it all the way up to $14 out on the road at some remote fuel stations.
Bulk dispensing at truck stops can be much less, but I'm kinda weary of those.

In emergencies where you can't find it (usually there's a Wally everywhere tho, and sometimes they're NOT the cheapest!) don't forget the likes of in-town hardware stores like True Value. They usually are ~$10.99 on the 'Blue DEF' branded jugs as well.

Don, the new Buc-ee's here are coming with DEF at the islands. Perhaps as the ones closer to you are renovated, you will have access there as well. The one near me just expanded by adding a new island with DEF (and Diesel) at the pumps, which they sell for $2.50/gallon and it is in underground tanks, rather than above ground tanks or totes.
