Sounds like fuel problem to me. I would check fuel pressure at the Schrader valve. Make sure you have a consistent 4-7 psi. Make sure fuel filter isn't plugged. Check lines to make sure they aren't plugged. Check pickups in the tanks make sure they're not rotting out and sucking air.
I chased fuel problems through all these routes and eventually found that my fuel selector valve was stuck halfway between front and rear tank. It couldn't flow enough fuel to run the truck at 55 and would try to stall faster. Mine was also drawing from the rear and sending to the front dumping fuel all over the road.
You could pull the lines from the selector valve and run them straight into a Jerry can to start isolating the problem.
Make sure the fuel tank is full. If it's near empty, and the fuel screen gets clogged, a flapper inside the pickup will open, drawing fuel from around the 1/4 tank mark, or air if there's no fuel.
It's basically a matter of finding out where you are getting air into the system when you rev it.
i am going to call a different fuel issue.
remove the fuel shut off power wire and hook 12 volts directly from the battery to the pump. then take it for a ride and see if it shuts off.
it sounds like the power lead to the fuel shutoff is getting interrupted turning the injector pump off.
