so my doors rattle on my 79 F250 and am wanting to fix it, so my question is, do I need to just change the door latch assembly or are there other parts that go along with it to help the doors close and latch, close properly ?
Depends on the cause. If the rubber weatherstrip is wore out, you could replace it. Dennis Carpenter rubber is the original and is good stuff. If the door is just loose, you could try adjusting the striker bolt.
The striker bolt should have a plastic sleeve on it. Without that sleeve, the door will tend to rattle and latch poorly. I need one for my passenger door.
Good to know!! Pulled my Doors to repair some rust and trying to adjust/align them now. Didn't know about the plastic Sleeves. Can I buy them separately or do I have to buy new Striker Bolts?
You can buy the solid sleeve separately, But I haven't figured out how to install them. You have to remove the large washer on the striker to get the solid sleeve on, but the washer won't come off.
You can use plastic tubing for the sleeve & slit it to get it on. That way you don't need to remove the washer or the striker at all.
You can get the striker bolt and sleeve at most parts stores.
I have cut the large washer off , replaced the plastic bushing, and used a flat washer to replace the one cut off.

Note: Ford did not sell the nylon sleeve by itself.
Sleeves replace easily - remove the bolt and they literally slide on. They are something like $5 for several at your local store. You can fab your own from PVC but why bother if they are that easy and cheap to replace? (unless you have scrap PVC the right size already)
The thing is that on the 73-9s the washer will not go over the threaded part of the bolt. Replacement ones will un-screw making the sleeve replacement easy.
I like 1/2" pex tubing myself. About 3/4" long and slit. Cheap and easy without
dealing with door alignment. Regardless of your fix, the sleeveless striker is probably the cause of your rattles.
