I have an 02 F350 7.3 ... I recently put a 2.5 leveling kit in it and I was originally think about going with 33's but i hear alot of people arent completely happy with the way they look. So ive been thinking about going with a set of 315/75r16's basically 35's ... But i know they are gonna rub with stock rims, so if i buy a set of aftermarket rims what is the MINIMUM amount of offset i need to clear them so they wont rub when im fully locked ?

That sounds good if your ready maybe buy new wheels. My truck came with 18 on 35s....someone didnt know how to measure and they rubbed the leaf springs 3 wide to make a u turn and hearing the tires rub the springs is rough. Eventually i replaced the wheels with some deep dish 18s (30k miles of dealing with it later) There is sometimes some rub on the wheel wells but I'm going to trim them back with this air tool and custom make something to cover the hole. No more leafspring rub so the wheel turns all the way. I also feel the geometry of the deep dish keeps the load evenly spread to the tire and places less strain on the truck primarily the wheel bearing hub assembly.

I purchased 18 tires off there last year then hit up discount tire for 20 a piece installed + they are so crazy there they even will sell you a road hazard warranty even though you didn't buy the tires from them it's deft worth it with theee expensive tires and wasn't too expensive
