This is how I do it most of the time. If I'm towing, the Tow/Haul is set and I engage the engine brake to the Auto setting. There are some hills where I know that I need to actively manage the transmission so I switch the engine brake to the first setting (aka Full On). I get more exhaust brake action with this setting.

I take it slow going down hills. I'm THAT guy going 5 MPH under the speed limit.
