My 2007 will ding when lights are left on and door is open or when key is in ignition and off and door is open. Sounds like somebody has changed that on yours.

Ditto. My '07 F150 chimes when the headlights are left on or the key is left in the ignition when I open the door.

I am going from memory here (its not great lol) but there are 2 or 3 "features" in my 04 anyway (should be the same) that can be toggled on/off through some odd key fob and engine key run position combination. I think the chime may be one of them, I will have to check my owners manual at a later date but if you have yours check it out. I came across these when I installed my alarm and the auto lock door feature that activates after driving 10 feet became redundant (and a bit annoying) as the security system took over all locking functions and it just caused the locks to pulse again while already locked in anti car jack mode. I might be way off (memory) but I would swear that the warning chime could be toggled as well and when you complete the fob/run sequence correctly the horn will honk by itself to indicate what you have done. I was just as surprised when I found this little candy cane in my truck lol. Merry Christmas!!
