Could be a simple mater of cab on chassis alignment. Steering column is attached to body. Steering box is attached to frame on a 2wd it is very close to the cab. Any misalignment could easily show up at the steering wheel. My $0.02
I have a 69 with bucket seats in my garage that I am doing some work on. Where the column attaches to the dash just below the gauge cluster is centered to the driver. Where the column goes through the firewall it is about 1 to 1.5 inches more toward the center of the truck. It is not inline. ALL THE CABS ARE THIS WAY. If you wanted to make your column straight it would take quite a bit of firewall work. Where the column passes through the firewall is where the supports are for the brake and clutch assembly. This not adjustable either. Regardless of cab to frame to box placement.

It's really a whole lot of fuss for nothing. It makes no difference in the way the trucks drive and, even as picky as I am with things like balance and alignment, it never bother me.
Ever get behind the wheel of a Shelby Cobra? The steering wheel is nicely positioned but the pedals are offset to the left... really uncomfortable. Was gonna buy or build one until I encountered that so I picked up a model from Ford and Shelby's nemesis.

I have a friend with a Superformance version and another friend with an Arntz model.
I adjusted mine are the steering column shroud. I still wasn't happy a wallered out the oblong holes of the column assy. It's close enough it won't make me crazy
