Arrow overheating after shutdown?

Hi guys,
I've searched the board and haven't seen this problem, hopefully someone can help.
My 75 F250 w/ 390 4V, 4 core radiator, new fan clutch and thermostat, normally runs in the low to mid normal range. I run a 50/50 mix of Prestone and distilled H2O. But the last few times I've run it down the freeway for more than about an hour or so, it will run in the middle of the normal range, but if I pull over at a rest area and shut it off, when I come back the radiator will be boiling over. When I start it back up the gauge will show hot, but as soon as I start to get back on the freeway, the gauge will drop down to the N in normal. If I don't shut it off, then I don't have this problem. Is this normal? Is it just that there is so much hot metal and as soon as the water pump stops circulating the water, there just isn't enough water to keep the engine cool?

Maybe you need a new radiator cap. Perhaps the pressure isnt high enough to prevent perculation.
