Has anyone used this setup for the mark 8 fan

Yes. I run close to that set up though I don't use Volvo relays.

My MarkVIII 2 speed fan runs low speed through temp sensor at 190* and high speed by toggle switch. I see no option for a temp sensor control with that set up.

Yes.. works great. I control the fan speed settings through the Edelbrock E-street tablet interface.
