Both of those can be be accomplished without removing the motor. I did it when I had to replace the clutch, pressure plate, TO bearing, and internal slave.
As far as written procedures or a guide, I'll have to look at my Chilton shop manual to see if there is a step-by-step procedure. I have a factory service manual also, but not sure if it too has specific start-to-finish procedures.
