Apologies for not reading the whole thread;

Have a CEL? Way to read codes? New (not rebuilt) IPR I see, but ICP sensor?

He (mechanic) said he checked the pressure and it was good. He said he let the truck warm up for 20 mins, with no problems, as soon as he put it in drive it stalled. Now he says it could be the pedal sensor, I'll have a whole new truck by the time I finish throwing parts at it

Is he monitoring fuel pressure when it stalls? Check the fuel bowl to see if it is full after it stalls.

Sounds like you need a new mechanic?! Throwing parts at these vehicles to try and fix an issue gets extremely expensive, and quick!

So it is either a restriction in the tank or the pump. Under load it is unable to supply the proper amount of fuel. You said the tank was full so the foot should not be the issue, but those screens on the foot could be clogged, but didn't you get some sort of fuel pump wiring code earlier?

Check the FPR spring on the return line back to the fuel tank. Also, has your fuel bowl been rebuilt yet over the course of the truck's life?
