I am going to remove the valve covers and change glow plugs this weekend. I'm wondering if there is any preventative maintenance/inspection I should do while I'm in there?

Don't do something you might regret. I suggest you not touch the injector nor rockers. They're obviously tight or you would have noticed before now with 340k unless your going to reseal.
OEM only for the glow plugs. And snug up the injectors (120 in lbs). You may want to watch for oil leaking at the base of the injector at the top of the head. Could be time for injector orings.

Is this done with the engine running, or can it be detected by looking for evidence while not running?
Very confusing thread! I thought the majority here agree if you open the valve covers you should check injector and rocker arm torque, and replace both UVCH's if they have not been previously addressed.

Some are of the "If it works, don't mess with it" crowd - I won't argue that point. I can tell you that few people find the injector bolts at factory spec - and those who tighten them back up report back with how quiet their engine is after the fix. Since I am the self-proclaimed grand pooh-bah of all Injector Tightendom - tighter is undoubtedly quieter.
O-rings... great idea, but this might open a can of worms - or not. For me - I have way too much practice under the VCs, so I'd replace the O-rings. For the newb, maybe it's best to save that until symptoms arise. Turning bolts and replacing connectors are one thing, but popping so much as one stick - that's way more involved for the uninitiated.
The fuel filter looks good, I understand some dark debris can be a sign of injector O rings which I am going to steer clear of. The truck runs well and I don't want to bite off more than I can chew. I am going to check the torques though... Just need to find a torque wrench that small. I don't think the 4 footer will do it.
I'll run the engine as well with the covers off and look for oil leaking. Then assess the oring situation from there I guess.
I bought the motorcraft GP's by the way. It sounds like you would be crazy to buy anything else to save a couple bucks!
