I got a 91 7.3 a couple weeks ago. Ended up toasting the frame and body a few days ago in an accident. I'm planning on throwing the motor in a different body but that is going to take some time to get so I was wondering what I need to do to make it safe for that motor to sit for an extended period of time. Make sure it doesn't get water in it, that's the main thing. If it's going to stay in the vehicle, add a tarp over the top of the engine to prevent any water from a leaky hood seal getting into it.
You can also pull the glow plugs and squirt a bit of engine oil down each, crank the engine over to get the cylinder walls lubricated.
Depending on your situation, it might be better to just start the engine and let it run for a couple minutes every 3 months or so, just to keep everything lubricated and turning freely, and ready to just drop in and go when you do have another body.
Diesel fuel is a lubricant and gets sprayed in the cylinder every other revolution so isee no reason for oil in the glow plug holes. As far as starting it every couple months, i wouldnt reccomend thet either, cold starts are hard on engines especially if you dont let it get up to temp. Diesel fuel doesnt go bad like gas does so you dont need to worry about that. Just keep the water out like rob said. If it sits on top of the air cleaner it can leak past the hole in the center and ruin an engine.
