NOS means "New Old Stock", never been installed. Shelf wear is acceptable. It may have dings and other faults from being in storage, but the item is new from the standpoint of never having been used.
It's possible some resellers rebox genuine Ford items. Whether or not that's the case here, more likely the seller just likes the word or meant "NOS From LMC". Sort of like "Mint", it probably doesn't really mean anything in an eBay listing.
I just looked at the first product on that page. It was for a set of HID replacement headlights. Since Ford didn't make HID headlights for '97 - '91 F-series that I am aware of, I seriously doubt these are NOS.
And yes, NOS means new-old stock. It's a phrase used to describe new in the box original parts for old vehicles. Typically the parts are obsolete so any available "new" (unused) originals are "old" (were made a long time ago).
"Identical" reproduction parts are not NOS, and upgrade parts (like HID to replace halogen) are not NOS.
I could see the FORD emblem in the pics they posted. I went ahead and bought a pair. Pretty pricey, but mine are original to the pickup (1987), and are so yellow I can't tell if the headlights are even on. I really appreciate the help here.
