A few months ago I replaced my door seals, striker post and lock assemblies. I still can't get the doors tight. the front edge is a little shy of even and the back edge of the door is a little proud. The post are pulled in all the way. As far as I can tell the door just needs to pull in more but it's firmly latched.
I think you may have the post, or striker, adjusted in too far, and the door latch is only catching on it's first detent. Adjust the striker out, and see if when you shut your door it is latching fully, engaging both the initial latching action and then the second, complete closing of the latch on the striker post. It may seem counterintuitive to move the striker out to make the door shut flush, but give it a try.
edit: also, is your new weatherstrip hollow or solid. If solid, it might be exerting a little too much closing resistance coupled with the improperly adjusted striker. The course of action should be the same...adjust the striker out a little.
Hey beartracks, so glad you got it all worked out. Sometimes adjusting body panels can give me fits, and the only way I knew what the problem was, is that I've done it myself.
