I switched cabs 10 years ago on my 51 Ford F1 and now I can't find the patent plate that was mounted on the cab. I'm curious if anyone knows of a way to find out the original color of my truck? I have the VIN but that doesn't give me the information I am looking for.

My 49's had numbers stamped on the firewall near the center
Paint code information is either a stamp on the firewall, or a code letter on the glove box plate for models built after September, 1951. Since you no longer have the original cab, the code will be lost. Do you have any of the original sheet metal; fenders, hood, box, etc? There were limited color choices so a little forensic work should turn up the answers to your question.
If you want to know the original color of the replacement cab, it might be contained in a stamp in the cowl. I say it might be because the stamp wasn't there through the entire 1951 run.
Mine is located here, drivers side above the "bulge". The "H" separated from the rest of the code is the color code on mine... Silvertone Gray.
My code reads "RH F4 H 2IH 2272:
RH = Richmond, CA plant
F4 = F4
H = Silvertone Gray
2IH = built August 21 2I = 21, H= August (Jan = A, etc)
2272 = 2,272nd vehicle off the line in August, 1951
