I haven't used any of these myself (my harness was salvageable), but options include Painless Wiring, Centech, and Ron Francis. I've heard better reviews of the latter two than the first one, but a search on the forums for any should bring up some threads where people have used them so you can see how it worked for them.

I bought a Painless 12 circuit fuse panel and wiring harness. When it came in, I changed my mind because it seemed like it was an all or nothing deal, as in do it all at once or nothing. I then purchased the 12 circuit fuse block separately, and was much happier. I could install this and work each circuit separately, which meant being able to do it in separate days, if needed. Doing it this way, you will need to keep each wire labelled correctly. I used 12ga red wire for all runs and set up ground stations to tie in to with 12 ga black wires. Total time for my harness, including old removal was about 16 hours.
Finally, since my old harness had a lot of hacks into it, I went with a one wire alternator and HEI unit for ease of installation.
