The 300 sounds great!! I love the sound of a 300 with no exhaust. That's an aftermarket 4V intake manifold. The hardest part with the 4V carb is usually just the throttle linkage or cable set up.

You've got a few choices. But here's a couple.
If you want a stock type cable( I mean a factory part not stock 53 part ) then the Ford trucks, vans or Full size Bronco's 80 or newer are a good source. I like to take a piece of wire and kind of lay it out to see how long of a cable you are going to need. Then hit the junk yards with a tape measure or that piece of wire you used and find one that is close enough to work. Ford offered a lot of different engines and carbed or EFI and each one has it's own cable length.
Doing it that way may require some modifications to the cable ends or the carb and pedal.
What I prefer is the universal throttle cable made by Lokar. They offer them in the standard black cable covering and the Braided ss covering. I get mine From Summit racing.

But if you can handle the truck build I see you doing so far you should have no problem adapting the Lokar cable to hook up to your stock pedal. The Lokar cable is a universal cable so it's adaptable.
