oil temp drops suddenly

oil temp drops suddenly
As the title says, my oil temps will maintain around the EOT (ususally 3-4* higher). There are days when it stays there, then there are other days when the oil temps will drop about 10* cooler and slowly come back up.
Yesterday I flushed the cooling system, installed the Mishimoto 200* t-stat, and added a coolant filter. My truck has 111K+ miles on it. It runs like a top, have had it for 2 years and only use T6 oil. I am running an SGII
What could possibly cause this, and has anyone else seen anything like it before?
