A buddy of mine showed me a quick way to find out if it is the temp sensor or the gauge itself.
Take the wire off of the temp sender, and ground it somewhere on the engine( I used a nearby bolt on our 5.8) When you do this have someone inside the cab and see if the gauge moves. If it does, then it's probably the temp sender, if it doesn't, then it could be the gauge.
