Installing an electric fan on my radiator and i cant find anything that says what temperature the engine runs its best at. I need to know in order to get the correct wiring kit.

You can buy them with different ranges or an adjustable one. I personally just want to buy one with a good preset range, to save the hassle of adjusting and for the cheaper price.

As for the temperature, the stock thermostat is generally 195°. I don't think engine temp is as critical for a non-computer controlled engine, so something in that range, I would think, should do you just fine.
The fan sensor in the radiator should be set for around 180, if you are running a 195 T-stat in the engine. Lower temp stat, would need a lower setting for the sensor.
The sensor is reading the temp of the coolant in the radiator, if it is too warm, it cannot absorb enough heat to keep the engine cool.
Well, as an example, the 96 Caprice 9C1 I used to have, had electric fans, with a 195 t stat the fan was set to come on at 240 and shut off at 220. The 94 Mustang 3.8 I presently have will come on at 220 with a 192 t stat. A 200 switch-on seems kinda low and would pretty much have the fan running full-time. Of course, if you have AC you need a provision to turn the fan on whenever the ac is on ~Bill

I bet those sensors were in the engine, rather than the radiator.
Where the sensor is located, engine vs radiator, has a lot to do with the required temp setting.
In the engine, the temp should be 20-30 degrees higher than T-stat.
In the radiator, it should be 15-20 degrees cooler than T-stat.
Yes, with A/C, the fan should run while the compressor is engaged.
