The pick I used is a "J" hook, I had the same results. I ran the point under the o-ring and pulled straight up. Mine were still flexible. A couple broke and a couple shot on the floor.

I've done two things at various times: One, there exists a cap which only has one nipple on it. That right there, if you have two of them, solves the problem.
If you don't have that, just take a 1" piece of hose and thread a 1/4-20 bolt into it. Hose clamp it tight, and you've got a little plug.
Worked wonders for me; I've never had any leaks from those plugs.
I can't show you guys the bolt-plug method, because I had two spare single-nipple caps I installed the last go-round on this rig. My second rig currently has the bolt-plugs in it, though.
